TANDOORI CHICKEN WITH SPICED YOGHURT!
I love to cook its something I love to do in my free time. When I have had people over I have made this tandoori chicken with spiced yoghurt salad and I have had so many people say they have loved and asked for the recipe. This feeds 2-4 people it depends how much you eat if I need to cook it for more I just double it or triple it ect!
Ingredients
⅓ cup tandoori paste
½ cup yoghurt
800 g chicken fillets or tenderloins, cut into large pieces
1 tablespoon vegetable oil
150 g baby spinach leaves
2 Lebanese cucumbers, sliced thickly
250 g cherry tomatoes, halved
1 cup fresh mint leaves
Spiced Yoghurt
1 clove garlic, crushed
¾ cup Greek yoghurt
1 tablespoon lemon juice
1 teaspoon ground cumin
1 teaspoon ground coriander
Method
Combine paste and yoghurt in medium bowl with chicken and cover for 3 hours or overnight.
Combine all ingredients for spiced yoghurt.
Heal oil in large fry-pan, cook chicken in batches until cooked through.
Combine chicken in large bowl with spinach, cucumber, tomato and mint.
Drizzle with spiced yoghurt.
